Caramelized Onions and Garlic
Mashed Potato and Stilton Stack-
Potatoes -4 large russet potatoes
3 cloves garlic
2 T butter
1 teaspoon minced fresh thyme
1/.2 teaspoon salt
Pepper to taste
½ cup half-and-half
Layers
Bake Potatoes at 425 until skins are crisp.
Scoop out while very hot and combine with all of the above in a mixing
bowl. Beat/mash until light and fluffy. Set aside.
Onions -
4 large onions, sliced
2 tablespoons butter
¼ cup sherry
2 tablespoons brown sugar
2 teaspoons balsamic vinegar
Steamed Fresh Spinach
In large skillet sauté the onions
in the butter until very soft. Add sherry and brown sugar and cook over
medium heat until onion are rich and
And caramelized, stirring often. Stir in
vinegar. Set aside.
Assembly
Preheat the oven to 350 degrees.
Spray 6 clean cans (15oz) with top and bottoms removed and place them on a
sheet pan. Layer in the following order: 4 tablespoons mashed potatoes, 2
tablespoon caramelized onions, 1 tablespoon Stilton or Fontina Cheese
grated (or sharp flavorful cheese of your choice), and spinach. Repeat and
top with a third layer of mashed potatoes. Sprinkle with cheese and bake
for 10 minutes or until heated through.
To serve, slide a spatula under each stack
cylinder and transfer to a serving plate. Unmold, garnish with chopped
walnuts and additional onions, and serve.
